Raw vegetables are healthier than cooked vegetables. I don’t know where this old wives’ tale originated, but cooking actually enhances the absorption of vitamins and minerals.


My idea of a great recipe is one that combines sophisticated flavors with healthy ingredients, doesn’t keep you in the kitchen for hours and, in the end, provides an enjoyable eating experience. The following recipes hit the mark in every way. Plus they put to rest the myth that nutritious eating is incompatible with pleasurable eating. I think you’ll find them nourishing for your body and spirit alike.

Most of the ingredients used to make these dishes will probably be familiar to you. If not, I hope you will be inspired to experiment; in general, the more variety you can work into your diet, the healthier it will be. You may also be surprised to see that the recipes include some ingredients (cheese, eggs, olive oil, for instance) and dishes (cakes, pastas, potato pancakes) that you don’t normally find in a book devoted to nutritious eating. I believe that, in moderation and with some culinary ingenuity, you can include just about anything into your diet and still keep it nutritious.
